Grilled Gouda and Tomato

Leftover pesto, Gouda, tomato’s and challah…. sounds like grilled cheese time!  I had all of these ingredients sitting in my fridge and after eating at Melt a couple of weeks ago, making a grilled cheese sounded perfect!
The pesto and challah are from my breakfast of Poached Eggs and Basil Pesto on Challah, Gouda’s one of my staple cheeses that I always have in the fridge, and my tomato came from my local farmers market (yum!).
I lightly butter the sides of my bread with “I can’t believe it’s not butter” spread, built my grilled cheese and threw it on my grill pan.
While it was grilling, I covered my sandwich with foil to try to help the cheese melt and the insides get nice and toasty.  The Gouda didn’t get all melty like I was hoping it would but it still tasted good!
